Add diced onion and cook until softened
Add minced garlic, dried oregano, and dried thyme, cooking until fragrant
Stir in tomato paste and cook for a minute
Add red wine and let simmer briefly
Pour in vegetable broth and add soaked red lentils
Add crushed tomatoes and bring to a simmer
Cook for 20-30 minutes until lentils are tender
Stir in crushed walnuts and aged balsamic vinegar
Season with salt and freshly ground black pepper to taste
Cook pasta according to package directions
Serve bolognese sauce over cooked pasta
Garnish with fresh basil or flat-leaf parsley if desired
