Banana Bread
  1. Preheat your oven to 170 °C/ 340 °F (fan assisted), or 190 °C/ 375 °F (conventional). Grease and line a loaf tin or a bundt cake tin.

  2. Mash one banana (can be green or ripe). Cream the butter with sweetener. Add eggs and process until combined. Add dry ingredients and finally the mashed banana.

  3. Pour the batter into your loaf tin. Add one banana sliced in half. (Needs to be ripe).

  4. Depending on the shape of your tin, bake for 45 to 60 minutes or until a skewer comes out clean. If the top of the cake starts to brown too much, cover it with foil.

  5. Store, in a covered container, in the pantry for up to 5 days. Can be sliced and frozen fr up to 3 months.
