Preheat wok until nice and hot.
Add neutral oil to the wok.
Fry minced garlic and ginger.
Turn heat onto high for your wok.
Slice veggies: onion, cabbage, and celery.
Throw veggies into the wok and cook for about two to three minutes until you can pick up just a little bit of char.
Add a little bit of salt to the veggies.
Cook chow mein noodles on the side for about a minute (undercook them as they will cook more in the sauce).
Fry the noodles up for a couple minutes in your wok.
Mix sauce ingredients in a measuring cup.
Whisk the sauce.
Throw the sauce into your wok.
Toss everything for about two to three minutes until your sauce thickens up.
Add a little bit more dark soy sauce on top if you want it darker.
Taste and adjust sauces if needed.
