In a bowl, mix ground pork, onion, garlic, ginger, green onions, soy sauces, sesame oil, salt, and pepper until sticky.
In a heatproof dish, spread a thin layer of the meat mixture.
Add a layer of dumpling wrappers.
Repeat layering: meat → wrappers → meat → wrappers → meat → wrappers.
Pour water or chicken stock evenly over the top.
Place the dish in a steamer and steam over medium heat for 25–30 minutes, until the pork is fully cooked.
Remove and let it rest for a few minutes.
Mix soy sauce, rice vinegar, and chili oil, then pour generously over the dumpling lasagna.
Finish with chili oil and green onions.
