High-protein Smoked Salmon & Chickpea Salad
  1. Pickle the red onion in lemon juice and salt, set aside 10 mins

  2. Soft-boil eggs for 7 mins, then place into cold water

  3. Combine chickpeas, salmon, veg, oil, vinegar and seasoning

  4. Add Greek yoghurt mixture and coriander

  5. Top with eggs, pickled onion, radishes, spring onion
