  1. Remove white meat from the rotisserie chicken and set aside for serving

  2. Keep the dark meat and carcass for making the broth

  3. Bring 10 cups of water to a boil in a large pot

  4. Add the chicken carcass with dark meat to the water

  5. Add 1 onion, 3 pieces of ginger, and the pho spice package

  6. Add 2 tbsp fish sauce, 2 tbsp sugar or rock sugar, and 1 tsp salt

  7. Simmer the broth for 30-45 minutes to develop flavors

  8. Strain the broth and discard solids

  9. Cook 1 lb rice noodles according to package directions

  10. Divide cooked noodles into serving bowls

  11. Pour hot broth over noodles

  12. Top with reserved white chicken meat

  13. Garnish with scallion, onion, cilantro, beansprouts, and jalapeños

  14. Serve with lime wedges on the side
