Remove white meat from the rotisserie chicken and set aside for serving
Keep the dark meat and carcass for making the broth
Bring 10 cups of water to a boil in a large pot
Add the chicken carcass with dark meat to the water
Add 1 onion, 3 pieces of ginger, and the pho spice package
Add 2 tbsp fish sauce, 2 tbsp sugar or rock sugar, and 1 tsp salt
Simmer the broth for 30-45 minutes to develop flavors
Strain the broth and discard solids
Cook 1 lb rice noodles according to package directions
Divide cooked noodles into serving bowls
Pour hot broth over noodles
Top with reserved white chicken meat
Garnish with scallion, onion, cilantro, beansprouts, and jalapeños
Serve with lime wedges on the side
