Drop spoonfuls of the mixture onto a parchment-lined baking sheet, add nuts (if desired), and freeze for 1-2 hours.
Melt chocolate and coconut in 30 second increments until melted
Dip frozen bites in melted chocolate and place back on parchment paper.
Freeze for 15-20 minutes until chocolate is set.
