Chocolate Covered Pumpkin Bites
  1. Mix pumpkin puree, peanut butter, Greek yogurt, pumpkin pie spice, cinnamon, and vanilla extract in a bowl.

  2. Drop spoonfuls of the mixture onto a parchment-lined baking sheet, add nuts (if desired), and freeze for 1-2 hours.

  3. Melt chocolate and coconut in 30 second increments until melted

  4. Dip frozen bites in melted chocolate and place back on parchment paper.

  5. Freeze for 15-20 minutes until chocolate is set.
