Add oil to pan and heat over medium heat. Add onions and garlic and saute until fragrant.
Once fragrant, pour in stock or water, along with gochujang, gochugaru, light soy sauce, honey and sesame oil. Stir to combine and allow to come to a boil.
Once bubbling, add the tteokbokki rice cakes. Let the rice cakes cook until it softens.
Add fishcakes or protein of choice next.
Pour in heavy cream and stir to combine until you get a pinky/light red sauce.
Sprinkle over mozzarella cheese, and allow to melt. Cover with a lid to speed up cheese melt.
Once cheese melts, sprinkle on spring onions and serve immediately!
