Pour egg mixture over the crispy potatoes in the muffin pan
Top each egg bite with chopped turkey bacon, diced red bell pepper, Italian seasoning, parmesan cheese, and green onion
Bake until the egg mixture is fully cooked through
Cool and store for meal prep
