Smashed Potato Protein Egg Bites
  1. Preheat oven to 425 degrees Fahrenheit

  2. Place mini potatoes in a muffin pan and smash them flat

  3. Drizzle potatoes with olive oil and season with salt, pepper, garlic powder, and paprika

  4. Bake potatoes in the oven until crispy

  5. Blend 8 whole eggs with 1 cup cottage cheese, salt, pepper, and garlic until smooth

  6. Pour egg mixture over the crispy potatoes in the muffin pan

  7. Top each egg bite with chopped turkey bacon, diced red bell pepper, Italian seasoning, parmesan cheese, and green onion

  8. Bake until the egg mixture is fully cooked through

  9. Cool and store for meal prep
