Preheat oven to 180°C/365°F.
Mix together the egg whites, white pepper, and sesame oil in a large bowl, then mix in the chicken.
Blend the cornflakes to a fine crumb, transfer to a separate large bowl, mix in the salt and smoked paprika, then coat the chicken pieces in the cornflakes and transfer to a lined baking tray. Drizzle with olive oil and bake for 15-20 minutes until golden and crispy.
Meanwhile, in a medium bowl, mix together the honey sauce ingredients, except for sesame oil and ginger. When the chicken is baked, heat the sesame oil in a non-stick pan, sauté the ginger on medium heat for 2 minutes, then add the chicken pieces and honey sauce. Cook until the sauce is bubbling and sticking to the chicken, then remove from heat.
Serve on white rice. Garnish with sesame seeds.
