Mix all the sauce ingredients in a bowl.
Heat oil in a pan and stir-fry the ground pork or chicken until browned. Add a splash of rice wine if using.
Make space in the center, crack in three eggs, and let them cook to your desired doneness.
Pour in the sauce, then add the cornstarch slurry to thicken it. Stir everything together.
