Pesto, "Sausage" & Gnocchi Traybake
  1. Add the veggies, gnocchi and sausages to an oven proof dish and coat well in olive oil.

  2. Season with oregano, salt and pepper.

  3. Bake at 180C for 25 minutes.

  4. Stir in the pesto.

  5. Serve with a drizzle of olive oil and, if you like, some vegan cheese too.
