Soak the chia seeds in one shot of espresso and let them absorb the liquid
Add cocoa powder, rice flour, yogurt, sweetener, spices like vanilla and collagen if using
Add baking powder and baking soda last, then a splash of apple cider vinegar
Mix quickly and pour straight into a small mold
Bake in the air fryer for 25 minutes at 250°C if preheated, or 30 minutes at 250°C if not preheated
Let it rest for at least 30 minutes before eating
Serve with yogurt underneath, melted 100% dark chocolate, hazelnuts and almond butter on top
