Whiskey Apple Pork Loin with Caramelized Shallots & Herb Butter
  1. Preheat the oven to 375°F.

  2. Season the pork loin with salt and pepper.

  3. In a large skillet, sear the pork loin on all sides until browned.

  4. Remove from the skillet and set aside.

  5. In the same skillet, add the whiskey and deglaze the pan, scraping up any browned bits.

  6. Add the sliced apples and shallots, cooking until caramelized.

  7. Stir in the brown sugar and cook until melted.

  8. Place the pork loin in a roasting pan and pour the apple and shallot mixture over the top.

  9. Roast in the oven for 30-40 minutes, or until the pork reaches an internal temperature of 145°F.

  10. While the pork is roasting, make the herb butter by mixing the chopped herbs with softened butter.

  11. Once the pork is cooked, let it rest for 10 minutes before slicing.

  12. Serve the sliced pork loin with the caramelized shallots and apples, topped with a dollop of herb butter.
