Add all of the ingredients to a blender. Blend until smooth.
Taste & adjust as you'd like (more vanilla, sweetener, salt, etc.). If you find you want it thinner or to balance out the coconut, feel free to add ¼-⅓ cup other non-dairy milk and blend again.
Pour the creamer into your container and store in the fridge for up to a week. Shake before use. Use in all your favorite coffees!
