Preheat oven to 180°C
Spread cranberry sauce down half the pastry lengthways
Add sliced Brie and top with turkey slices
Season with salt, pepper and herbs of choice
Fold pastry over and sprinkle with flour
Roll gently a few times to slightly flatten (with paper on top)
Slice into 10-12 pieces, each 2-3 inches
Make 2 slits down the middle of each piece and twist
Place in baking dish and brush with egg wash
Bake for 18-22 minutes until golden and flaky
Remove from oven and sprinkle with Parmesan
Bake for additional 3-5 minutes
Garnish with herbs and serve hot or cold
