Southwest Chipotle Chicken Salad
  1. Marinate chicken thighs with chipotle peppers in adobo, dan-o's chipotle seasoning, cumin, salt, and pepper overnight

  2. Cook marinated chicken on a cast iron skillet over medium-high heat until cooked through and lightly charred

  3. Chop cooked chicken into bite-sized pieces

  4. Combine black beans, corn, diced red onion, diced red bell pepper, chopped jalapeños, diced tomato, and chopped cilantro in a bowl

  5. Blend chipotle peppers in adobo, sour cream, mayo, lime juice, garlic powder, onion powder, salt, and pepper until smooth to make the dressing

  6. Toss chicken and vegetable mixture with chipotle dressing

  7. Finish with avocado or crushed tortilla chips before serving
