Cut the challah bread into thick slices - aim for about 6 slices per loaf. Trim off excess bread.
Mix the softened butter, brown sugar, and honey together to make a smooth compound butter.
Slather the honey butter mixture on all sides of the sliced challah bread.
Arrange the slices on a parchment-lined baking sheet and bake at 360°F for 8-10 minutes.
Flip the slices and bake for another 8-10 minutes until deep brown in color.
Remove from the oven and place on a cooling rack for about 15 minutes to allow the coating to harden.
Serve with vanilla ice cream and warm salted caramel or an extra drizzle of honey.
