Preheat the oven to 350 degrees Fahrenheit.
In a skillet over medium heat, scramble the ground beef until no longer pink. Drain excess grease.
Stir in the taco seasoning and then remove from heat.
In a large bowl, whisk the eggs and heavy whipping cream.
Add in the beef, ½ cup of the Colby Jack cheese and the salsa.
Stir until just combined and then pour into a greased pie pan.
Top with the remaining cheese and bake for 30-40 minutes.
