Boil and peel eggs the traditional way, or use the time-saving method by adding eggs to a greased loaf pan, placing the loaf pan in a larger baking dish filled with water up to the level of the eggs, and baking at 350 for 30 minutes.
Once eggs have cooled and you've mashed them, add to a large bowl, along with the red onion, parsley, chives, pickles, mayo, mustard, salt and pepper.
Mix well to coat, taste and adjust seasonings as needed.
