Preheat your oven to 500°F.
Season the chicken pieces with kosher salt.
In a saucepan, heat 1 tablespoon of olive oil over medium heat.
Add the chicken to the hot oil and cook for about 5 minutes, shaking the pan occasionally, until the chicken is no longer pink.
Stir in 2 tablespoons of barbecue sauce and mix well, then remove from heat and set aside.
On two separate pieces of parchment paper, stretch the pizza dough into two rough circles, each about 12 inches in diameter.
Transfer each piece of parchment paper onto a baking tray.
Drizzle the remaining olive oil over the dough, then spread the remaining barbecue sauce evenly on top.
Distribute the mozzarella slices evenly over the sauce.
Add the cooked chicken pieces and top with red onion slices and grated Gouda.
Bake the pizzas for 15 minutes, or until the dough is fully cooked and the edges of the onion and cheese start to color.
Once slightly cooled, season with salt and pepper, and garnish with fresh cilantro.
