In a bowl, add the beef, garlic, ground cumin, coriander, paprika, cinnamon, chopped parsley, and red onion. Season with salt and cracked black pepper. Mix until combined.
Chop your veg salad ingredients and marinade of oil, lemon and salt to taste. Set aside.
Grab a piece of Pita Pocket bread and split it open so it no longer is a pocket. Spread ⅓ cup of the meat mixture all over one side in an even layer all the way around.
Heat up a pan and add the olive oil. Sear on the meat side first until golden, around 3-4 minutes. Then, flip over for a couple minutes to toast up and cook on the other side.
Remove from the pan and top with your chopped veg salad, tzatziki and fresh parsley. Fold like a taco and enjoy!
