Sauté the diced onion in a pan until translucent.
Add the extra lean beef mince/ground beef and minced garlic to the pan. Cook until the beef is browned.
Add the taco seasoning mix (salt, chili powder, cumin, smoked paprika, black pepper, onion & garlic powder, oregano) and stir to coat the beef.
Pour in the canned diced/chopped tomatoes and chicken broth. Simmer for 10-15 minutes until the sauce has thickened.
Stir in the cooked minute rice.
Lay out the tortillas and divide the beef and rice mixture evenly among them.
Top each burrito with the light/low-fat cheddar cheese, nacho cheese sauce, and light grated mozzarella.
Fold the burritos and grill or pan-fry them until the cheese is melted and the tortillas are crispy.
