Homemade whipped cream
In a saucepan over medium heat, combine the heavy cream, whole milk, sugar, salt, and espresso, if using. Whisk gently as it warms — you want it steaming with tiny bubbles around the edges, but do not let it boil.
Once the mixture is hot, turn the heat down and add the chopped chocolate. Whisk until it melts completely and becomes thick, glossy, and smooth.
Stir in the vanilla bean paste, then finish by folding in a generous spoonful of homemade whipped cream to give it that classic French richness.
Pour into your favorite mug and top with more whipped cream.
For presentation, shave a little dark chocolate over the top.
