Perfect Fluffy Challah
  1. Start with the water, sugar and yeast and mix them a little

  2. Add the rest of the ingredients, with salt going in last

  3. Knead the dough for a good 10 minutes

  4. Let the dough rise for 2 hours before shaping

  5. Shape the dough into 6 challahs of 4 strand challah, 180g each strand

  6. Let the shaped challahs rise for at least 1 more hour

  7. Keep the dough covered at all times, even while shaping

  8. Bake the challahs

  9. Cover the challahs immediately as soon as they come out of the oven
