Start with the water, sugar and yeast and mix them a little
Add the rest of the ingredients, with salt going in last
Knead the dough for a good 10 minutes
Let the dough rise for 2 hours before shaping
Shape the dough into 6 challahs of 4 strand challah, 180g each strand
Let the shaped challahs rise for at least 1 more hour
Keep the dough covered at all times, even while shaping
Bake the challahs
Cover the challahs immediately as soon as they come out of the oven
