Add the grated radish and 1 cup water to a wok or large pan, and bring to a simmer. Simmer for about 10 minutes, stirring occasionally so the radish does not brown. Transfer the cooked radish to a large mixing bowl once cooked to cool. Pour remaining liquid into a measuring cup, and add water until you have a total of 1 cup liquid. Add to the mixing bowl with the cooked radish.
In the same wok, sauté the shrimps, mushrooms, and sausage and cook for about five minutes. Stir in the chopped scallions and remove from the heat to cool. Add rice flour, cornstarch, salt, sugar, and white pepper to the mixing bowl with the radish and cooking liquid. Mix well then add in the cooked shrimp, mushrooms and sausage then let sit for 15 minutes.
Transfer the batter into an oiled loaf pan and steam for 50 minutes. Once cooked, let it rest for 30 minutes before slicing them into 0.5 inch thick pieces. You can opt to enjoy it like this, or you can also pan-sear until golden brown for the extra crunch.
