Preheat oven to 350°F. Line 2 baking sheets with parchment paper and set aside.
In a large bowl, beat together the butter, sugar, and salt with a wooden spoon until well combined.
Sift in the flour and gently mix until just combined, taking care not to overwork the dough.
Gather the dough into a ball. Roll out the dough to ½" thickness on a lightly floured surface.
If using a cookie mold, lightly dust the mold with flour. Press the mold firmly into the dough, then cut out with a 3" circle cookie cutter. Transfer the cookie to a baking sheet.
Repeat Step 3 for remaining cookies. If desired, you can gather and reroll the dough to cut more.
Bake for about 15 minutes or until set but still pale.
Allow to cool for a few minutes on the pan. Transfer to a wire rack to cool completely.
Sprinkle extra sugar on top.
