Mrs. Hall's Shortbread
  1. Preheat oven to 350°F. Line 2 baking sheets with parchment paper and set aside.

  2. In a large bowl, beat together the butter, sugar, and salt with a wooden spoon until well combined.

  3. Sift in the flour and gently mix until just combined, taking care not to overwork the dough.

  4. Gather the dough into a ball. Roll out the dough to ½" thickness on a lightly floured surface.

  5. If using a cookie mold, lightly dust the mold with flour. Press the mold firmly into the dough, then cut out with a 3" circle cookie cutter. Transfer the cookie to a baking sheet.

  6. Repeat Step 3 for remaining cookies. If desired, you can gather and reroll the dough to cut more.

  7. Bake for about 15 minutes or until set but still pale.

  8. Allow to cool for a few minutes on the pan. Transfer to a wire rack to cool completely.

  9. Sprinkle extra sugar on top.

  10. Serve to the residents of Skeldale House!
