High Protein Loaded Breakfast Burritos 🌯
  1. In a bowl, add the diced potatoes, olive oil, salt, Italian herbs seasoning, onion powder, garlic powder, chili powder, and smoked paprika. Mix together.

  2. In a pan, cook the diced onion until it has some color.

  3. Add the extra lean beef mince and the same seasonings used for the potatoes. Cook until the mince is fully cooked through.

  4. Add the Worcestershire sauce and tomato paste. Mix and let it cook for a few more minutes.

  5. In a separate bowl, add the eggs and blended cottage cheese. Mix together and cook on low to medium heat, stirring gently every minute, until the eggs are cooked through and fluffy.

  6. Warm up the tortillas on a pan on low heat for 30 seconds on each side to prevent them from breaking when rolling.

  7. Assemble the burritos by evenly distributing the potato mixture, beef mince mixture, and egg mixture onto the tortillas. Top with the Sriracha mayonnaise.

  8. Roll the burritos tightly.

  9. To reheat, take the burrito out of the wrapper or foil, wrap it in a slightly damp paper towel, and microwave for around 2 minutes. Then, air fry at 190C or 375F for approximately 5 - 8 minutes.
