Ginger Chicken Thigh Udon Stir-fry
  1. Get all your ingredients and equipment ready.

  2. Skim through these steps, then wash your fruit and veg.

  3. Take your chicken out of the fridge, open the packet and let it air.

  4. Heat a large, wide-based pan or wok (preferably non-stick) with a drizzle of vegetable oil over a high heat.

  5. Once hot, add your chicken and cook for 7-8 min or until starting to brown.

  6. Meanwhile, chop your sweet pointed pepper[s] finely into rings.

  7. Once the chicken has started to brown, add the pepper rings and cook for 1-2 min or until starting to soften.

  8. Once the pepper has softened, add your udon noodles to the pan and cook for 2-3 min further.

  9. Add your soy sauce, sriracha, toasted sesame oil and ginger paste and cook for 30 secs further.

  10. Add your blanched peas and cook for 1 min further or until the chicken is cooked through.

  11. Serve the ginger chicken udon stir-fry and garnish with your crispy onions.
