Pat chicken thighs dry with paper towels. Rub the prepared seasoning paste both under and over the skin of each thigh.
Place seasoned thighs skin-side up on a foil-lined baking sheet, ensuring they are evenly spaced.
Place sliced lemons and optional vegetables between chicken thighs
Bake for 35 to 40 minutes, basting once halfway through with the pan juices. Optionally, dot with butter during basting for a richer flavor.
For crispier skin, switch to the broiler setting and cook for an additional 2 to 3 minutes, monitoring carefully to avoid burning.
Verify that the thickest part of the chicken reaches an internal temperature of 165°F (74°C).
Allow the chicken to rest for 5 minutes before serving. Garnish with fresh parsley, and lemon zest.
