Pat pork pieces dry, then place in a shallow dish and stand at room temperature for 30 minutes.
Toss pork and salt in a bowl and season with freshly ground black pepper. Preheat an air fryer to 200°C for 3 minutes. Place half the pork, in a single layer, in an air fryer basket, rind side up. Cook for 12-13 minutes or until the rind is crisp and pork is cooked through. Transfer to a plate. Repeat with remaining pork pieces.
Meanwhile, to make the hot honey, stir honey, sweet chilli sauce and chilli flakes (if using) in a medium frying pan over medium heat until simmering. Simmer for 1 minute or until thickened slightly. Stir in lemon juice and remove the pan from the heat.
When the pork has finished cooking, return hot honey to the stovetop over medium heat. Add the pork and toss until coated and heated through. Serve the pork sprinkled with coriander, with rice and Asian greens alongside.
