Take Steak out of Fridge or Cooler, let meat rest for 20-25 minutes for an even Sear
Pat meat with napkin until dry
Add Salt and Pepper on both sides, use a generous amount
Turn stove on to MEDIUM-LOW heat, wait until pan gets hot before adding steak
Add a miminal amount of olive oil on Pan
Sear "Fat Cap" of steak first for 1 minute
Sear each side of steak for 4.5 minutes
Turn Heat to LOW and sear edges for 45 seconds each
Add butter and thyme to pan and "Baste"steak. Slightly tilt pan to get a good scoop and continue until butter is completely melted.
Let the steak rest for 2-3 minutes do not squeeze the steak.
Cut and garnish
Enjoy with over medium eggs and cheese for a good carnivore style
meal.
