Zest and juice the lemons
Save the lemon rinds in the freezer
When you have enough lemon rinds, make the syrup with 2 parts lemon rinds to 1 part sugar by weight
Mix the lemon rinds and sugar together and let it sit at room temperature for 4-5 hours
Strain the syrup, pressing on the lemon rinds to extract all the liquid
The syrup will be bitter-sweet and good for cocktails, tossing with ripe fruit, dressings, and glazes
