Bonus Lemon Syrup
  1. Zest and juice the lemons

  2. Save the lemon rinds in the freezer

  3. When you have enough lemon rinds, make the syrup with 2 parts lemon rinds to 1 part sugar by weight

  4. Mix the lemon rinds and sugar together and let it sit at room temperature for 4-5 hours

  5. Strain the syrup, pressing on the lemon rinds to extract all the liquid

  6. The syrup will be bitter-sweet and good for cocktails, tossing with ripe fruit, dressings, and glazes
