Sauté the sweetcorn kernels and black beans with 10g of butter, 1 tsp of cumin, 1 tsp of paprika, and 1 tsp of chili powder.
Assemble the roasted sweet potato, cooked chicken, bean and corn mixture, sour cream, Mexican cheese, fresh coriander, fresh chili, and a squeeze of lime juice.
