Protein Loaded Fajita Sweet Potato
  1. Roast the sweet potato in the oven at 200°C for 60 mins or in the air fryer at 200°C for 45 mins, until soft inside.

  2. Cook the chicken thigh fillet with 10g of butter and 1 Tbsp of taco seasoning.

  3. Sauté the sweetcorn kernels and black beans with 10g of butter, 1 tsp of cumin, 1 tsp of paprika, and 1 tsp of chili powder.

  4. Assemble the roasted sweet potato, cooked chicken, bean and corn mixture, sour cream, Mexican cheese, fresh coriander, fresh chili, and a squeeze of lime juice.
