Creole Jambalaya
  1. Heat oil in a large pot over medium-high heat

  2. Add sausage, cook until browned

  3. Add onion, cook until brown and carmelized about 10 min

  4. Add bell pepper, celery, cook until softened, about 5 minutes

  5. Add garlic and chicken, sauté until fragrent

  6. Stir in Creole seasoning, cayenne pepper, paprika, black pepper, and salt

  7. Add chicken broth, diced tomatoes, bay leaves, and rice and bring to a boil

  8. Reduce heat and simmer covered for 20 minutes

  9. Remove from heat and allow to sit for 5 minutes

  10. Fluff the rice. Remove bay leaves and garnish with green onions

  11. Serve hot
