Brown Butter Pasta
  1. Brown the butter and set aside (remove sage leaves)

  2. Boil pasta, reserving a cup of pasta water before draining

  3. When almost cooked pour browned butter back into a large fry pan and heat, add ⅓ cup pasta water and the pepper and whisk vigorously letting it thicken slightly

  4. Add cooked pasta with another ⅓ cup pasta water, toss then sprinkle Parmesan in an even layer on top of pasta

  5. Let it gently melt on top on a VERY low heat undisturbed

  6. Spin around with tongs until you get a glossy sauce

  7. Serve with sage leaves on top
