Cuban White Bean Soup
  1. Dried beans: Drain soaked beans. Add to a pot with fresh water and simmer 45–60 minutes until tender.

  2. Canned beans: Skip this step.

  3. Heat olive oil in a large pot.

  4. Sauté onion, bell pepper, and carrot for 5–7 minutes.

  5. Add garlic and cook 1 minute more.

  6. (If using ham/bacon/chorizo, cook it here first for extra flavor.)

  7. Add cooked (or canned) beans, potato, cumin, oregano, bay leaf, and broth.

  8. Stir in tomato paste or crushed tomatoes (optional but recommended).

  9. Let simmer 20–30 minutes until flavors combine and potatoes are tender.

  10. Mash or blend 1–2 cups of soup and return to pot for a thicker, creamy consistency.

  11. Add lime juice, salt, and pepper.

  12. Stir in fresh cilantro before serving.
