  1. Cut the chicken thigh in half. Place in a bowl and massage in the salt/pepper, grated garlic, ginger, and soy sauce.

  2. Add the beaten egg and potato starch; mix well until the chicken is evenly coated (it will be a bit sticky).

  3. Heat oil to 180°C (350°F) and fry for about 10 minutes until golden and cooked through. Drain on a rack.
