Pollo Al Limone (lemon Chicken)
  1. Pound chicken slices, dredge in seasoned flour.

  2. Sear in butter and 2 tbsp olive oil until golden. Set aside.

  3. Sauté onions, then mushrooms with remaining olive oil until dry.

  4. Deglaze with white wine. Add broth, lemon juice, lemon slices, parsley, and capers. Simmer 5 minutes.

  5. Add chicken to the sauce. Cover and simmer 4 minutes.

  6. Garnish with parsley.
