Proper Vegan Nachos
  1. Start by making the Queso Sauce. Combine all ingredients in a high-speed blender, blend until creamy. If it looks too thin, add more cashews.

  2. Place black beans in a small saucepan and gently pan fry. Add your choice of spices - we recommend chilli powder and/or cumin.

  3. Set aside and prepare guacamole. Mash ingredients together, adding salt and pepper to taste.

  4. Arrange chips on a large serving platter, and add beans, queso, salsa, chilli (if using), guacamole and herbs.
