Prepare Salad

  1. Combine cucumbers, tomatoes, chickpeas, red onion, ¼ cup feta, half the dill, half the parsley, and half the mint.

  2. Add lemon juice, olive oil, and sea salt. Toss to combine.

  3. Top with remaining ¼ cup feta and remaining herbs.
