Add 25 chocolate sandwich cookies to a food processor and pulse until the cookies resemble fine sand. In a large bowl add the cookie crumbs, while setting aside about ¼ cup for rolling in later. Add in cream cheese and mix through with clean hands or a rubber spatula. The mixture should resemble a soft dough.
Using a 1-2 tablespoon cookie scoop, portion out the dough on a parchment lined plate. Freeze the balls for 15-20 minutes.
In the meantime, melt candy melts and pipe small whites circles onto a silicone mat. Using a toothpick, dot some black for the pupils. I try to place the dot near the edge of the circle, for maximum cuteness.
Once the dough balls have chilled, roll between your palms to round them out. Drop each ball into the reserved cookie crumbs. Finally attached eyes and star sprinkles with a bit more melted candy melts.
