Add stew meat, diced yellow onion, garlic, sliced baby Bella mushrooms, stew seasoning, and most of the beef stock to the crock pot
Mix well and cover
Cook for 3-4 hours on high or 6-8 hours on low
Add 2 cups of white long grain rice without rinsing
Cover and cook for 45 minutes to 1 hour on high, stirring occasionally
Add the reserved cup of beef stock if needed for more liquid
Stir in 2 tablespoons of butter and ½ cup parmesan cheese
Serve and enjoy
