Barbecue sauce:
Remove the lower membrane that covers the rib bones, season with salt and pepper, and add herbs to taste. Add a splash of vinegar and extra virgin olive oil, massage the meat well to distribute the seasoning, and pack with aluminium foil (papillote style).
Bake for one hour at 200ºC (preheated) and leave it for another hour with the oven off, taking advantage of its residual heat.
While the meat is roasting, make a homemade barbecue sauce with the ingredients that I have detailed before. Once the meat is roasted, remove the aluminium foil and spread well with the barbecue sauce (on both sides). We can help ourselves with a silicone brush.
