Make a sauce by mixing together 2 tbsp light soy sauce, 1 tbsp oyster sauce, 1 tsp dark soy sauce, 1 tsp sugar, 1 tsp sesame oil, and 2 tbsp water in a bowl
Heat a wok or large frying pan and add 1 tbsp oil
Once hot, add the beef mince and stir fry for 3-4 minutes over high heat until browned and starting to crisp
Add the sliced onion, minced garlic, and ginger (if using) and stir fry for 1-2 minutes
Add the sliced pepper and stir fry for 1 minute
Pour in the sauce, bring to a simmer and stir fry for 3-4 minutes until thickened and coating everything
Add the spring onions and toss everything together
Serve and enjoy
