Salad

Ingredients
2 to 3 limes
3 tbsp olive oil
1 tsp ground cumin
¼ to ½ tsp hot red pepper flakes
¼ cup fresh parsley, chopped
¼ cup cilantro, fresh, chopped
½ tsp salt
2 19 oz cans black beans
3 cups corn kernels,frozen, then cooked
1 large red sweet pepper
3 green onions
Directions
Finely grate the peel of 1 lime
Using a folding motion from the bottom of the bowl to avoid breaking the beans, mix just until evenly distributed
Notes
Can be served in tomato cups!
