Silken Tofu Chocolate Mousse
  1. In a small microwave-safe bowl, combine the chocolate chips and coconut oil.

  2. Microwave for 1 to 3 minutes, stirring every 20 seconds, or until melted and smooth.

  3. In a blender, place the tofu, melted chocolate, peanut butter, maple syrup, vanilla, and salt.

  4. Blend until smooth.

  5. Pour into 2 to 4 jars and chill for at least 4 hours.

  6. Serve topped with yogurt and raspberries, if desired.
