Crockpot Cabbage Roll Casserole Recipe
  1. Cook ground beef in a skillet over medium-high heat until fully browned. Add onion and garlic in the final 2 minutes. Season with salt, pepper, paprika, oregano, cumin, and Worcestershire sauce. Drain excess fat.

  2. Combine crushed tomatoes, diced tomatoes, beef broth, tomato paste, brown sugar, garlic powder, onion powder, thyme, and pepper in a bowl. Stir well.

  3. Place all chopped cabbage in the bottom of the slow cooker. It will appear overfull but will reduce significantly during cooking.

  4. Scatter uncooked rice evenly over the cabbage layer.

  5. Spread browned beef mixture evenly over the rice layer.

  6. Pour tomato sauce evenly over the beef. Push some sauce down the sides to reach the cabbage layer.

  7. Cover and cook on LOW for 6 to 7 hours until cabbage is tender, rice is fully cooked, and sauce has thickened.

  8. Sprinkle shredded cheese over the top if using. Cook on HIGH for 15 minutes until melted and bubbly.

  9. Garnish with fresh parsley. Serve with sour cream on each portion.
