Soft-baked Peanut Butter Granola Bars-easy Recipe
  1. Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on two opposite sides. Lightly grease the parchment paper.

  2. In a large mixing bowl, combine peanut butter, honey (or maple syrup), and eggs (or flax eggs). Whisk vigorously until smooth and homogenous.

  3. Add rolled oats, chopped nuts, seeds, dried fruit, and salt (if using) to the wet ingredients. Gently fold until just combined. Do not overmix.

  4. Spoon the mixture into the prepared pan and press down firmly and evenly to compact it. Ensure the top surface is flat.

  5. Bake for 25-30 minutes, or until the edges are golden brown and the center appears set.

  6. Let the bars cool completely in the pan on a wire rack for at least 1-2 hours, or until room temperature. For cleaner cuts, chill in the refrigerator for 30-60 minutes.

  7. Use the parchment paper overhangs to lift the slab out of the pan. Cut into desired bar sizes using a sharp knife, wiping the knife clean between cuts.
