Spiral zucchini and set aside.
Heat olive oil over medium heat in a large skillet. Add in sliced turkey sausage and cook until browned. Remove and set aside.
Add the garlic to the pan and cook for 30 secs until fragrant.
Add heavy cream, chicken broth, Italian seasoning, and parmesan cheese to the skillet. Increase heat to medium and whisk until sauce starts to bubble and thicken.
Add in spinach and sun-dried tomatoes. Cook until the spinach is wilted. Add sausage back to the skillet along with the zucchini noodles. Cook a few mins until hot. Season with salt and pepper to taste and enjoy!
